7 Easy Budget-Friendly Fall Family Dinners to Make This Week

If figuring out what to make for dinner every single night feels like a full-time job…same. 😂 So I put together 7 easy budget-friendly family dinners to give you one less thing to think about this week.

This week’s dinners are GOOD. We’ve got crispy ground beef flautas with a homemade avocado sauce, cozy chicken and dumpling soup, creamy meatball soup, a big pot of chili, plus a few easy dinners already on the website that deserve another spot in the rotation.

As always, you don’t have to make these in any particular order—or even make all seven! Use what you already have, swap ingredients when it makes sense, and make the plan work for your family.

How I Keep 7 Dinners Budget-Friendly

The biggest thing I try to do when planning a full week of dinners is look at the week as a whole instead of shopping for seven completely separate recipes.

If one recipe needs an onion, I’m looking for another dinner that uses onion. If I’m buying chicken, I want to use it more than once. If I need cilantro for the flautas, I’m looking for another place to use the rest before it turns into green slime in the produce drawer. 😂

This week also uses a lot of inexpensive staples like ground beef, beans, rice, pasta, broth, canned tomatoes, onions, garlic, and frozen vegetables.

And before you go shopping, check your pantry first. You might already have the rice, broth, beans, pasta, seasonings, or canned tomatoes you need.

The goal isn’t to buy every single ingredient on a list. It’s to buy what you actually need.

  • 1 (24–26 oz) bag frozen homestyle meatballs

  • 4 small yellow onions
  • 16 cloves garlic
  • 2 avocados
  • 2 carrots
  • 2 celery stalks
  • 2 bell peppers
  • 1½ lbs baby potatoes
  • 6 cups broccoli florets
  • 3 cups baby spinach
  • 1 cucumber
  • 1 cup shredded carrots
  • 2 green onions
  • ¼ cup fresh cilantro
  • 2 limes

Dairy & Refrigerated

  • 2 tbsp butter + 2 tbsp butter (4 tbsp total)
  • ¼ cup sour cream
  • 1 cup milk
  • 1 cup + ¾ cup heavy cream (1¾ cups total)
  • 1½ cups shredded Mexican-style cheese
  • 1½ cups shredded cheddar cheese
  • 1 cup grated Parmesan cheese

  • 10–12 flour tortillas
  • ½ cup salsa
  • ¼ cup all-purpose flour
  • 10 cups chicken broth
  • ¾ cup dry orzo + 1½ cups dry orzo (2¼ cups total)
  • 3 cups cooked rice
  • 2 (14.5 oz) cans diced tomatoes
  • 1 (15 oz) can tomato sauce
  • 1 (15 oz) can kidney beans
  • 1 (15 oz) can pinto or chili beans
  • 3 cups V8 Original Vegetable Juice
  • 2 tbsp tomato paste
  • ¼ cup honey + 1 tbsp honey
  • ¼ cup soy sauce + 3 tbsp soy sauce
  • 3 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • Olive oil/cooking spray
