Back-to-school season means busier evenings and less time to think about dinner so I did the thinking for you this week.
This lineup leans into cozy, cheesy comfort food: creamy pasta, a couple of cheesy skillets, a fast stir fry, and a rice bowl, plus a few dinners from the archives that deserve another spot on your table.
1
Creamy Angel Chicken Pasta
This creamy angel hair pasta comes together with tender chicken in a rich, garlicky sauce that tastes way more special than the ingredient list suggests. It’s the kind of pasta dinner that gets emptied bowls without any convincing needed.
2
Cheesy Ground Beef & Potato Skillet
One skillet, one pan to wash, and a hearty mix of ground beef, potatoes, and melted cheese your family will actually ask for again.
3
Beef & Broccoli Skillet
Skip the takeout! This beef and broccoli skillet comes together faster than delivery and costs a fraction of the price, served over a simple bed of rice.

4
Chicken Enchilada Rice Skillet
All the flavor of chicken enchiladas without the rolling. This creamy, cheesy rice skillet is comfort food in one pan.
5
Garlic Butter Chicken & Roasted Potatoes
Buttery, garlicky chicken and perfectly roasted potatoes. Simple ingredients that taste like way more effort than they actually take.
6
Cheesy Beef Fried Rice
A great way to use up leftover rice, this one’s quick, filling, and endlessly customizable with whatever veggies you have on hand.
7
Creamy Tomato Tortellini
Cheese tortellini in a creamy tomato sauce that comes together in the time it takes the pasta to boil. An easy win for a busy weeknight!
How I Keep 7 Dinners Budget-Friendly
One thing that helps me more than any single ingredient trick: I build weeks like this one around a few pantry basics LIKE rice, pasta, cheese, chicken, ground beef and just change up the sauce or seasoning each night. That means I’m not restocking my whole pantry every week, and the grocery bill stays predictable even when what we’re eating doesn’t repeat. Check your freezer and pantry before you shop. Chances are you’ve already got rice, pasta, or a can of something you need for one of these!
Your 7-Night Dinner Plan
Night 1: Creamy Angel Chicken Pasta
Night 2: Cheesy Ground Beef & Potato Skillet
Night 3: Beef & Broccoli Stir Fry + Rice
Night 4: Sour Cream Chicken Enchilada Rice Skillet
Night 5: Garlic Butter Chicken & Roasted Potatoes
Night 6: Cheesy Beef Fried Rice
Night 7: Creamy Tomato Tortellini
Move these around however you want. There are no meal-plan police. 😂
If Tuesday turns into a cereal-for-dinner night, move Tuesday’s recipe to Wednesday. The whole point of planning ahead is to make your week easier, not give yourself another thing to feel behind on.
