Lindt Stuffed Christmas Cookie 🍪🎅🎄
For the Cookies:
-2¼ cups all-purpose flour
-½ tsp baking soda
-½ tsp salt
-¾ cup unsalted butter, melted and slightly cooled
-1 cup packed brown sugar
-½ cup granulated sugar
-1 large egg, room temperature
-1 large egg yolk, room temperature
-1 tbsp vanilla extract
-1⅓ cups white chocolate chips![]()
For the Filling & Decoration:
-12 Lindt Lindor chocolate truffles
-Red and green Christmas sprinkles, optional![]()
Instructions:
1. Prepare the dry ingredients. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
2. Mix the butter and sugars. In a large mixing bowl, combine the melted, slightly cooled butter, brown sugar, and granulated sugar. Mix until well combined.
3. Add the eggs and vanilla. Beat in the whole egg, followed by the egg yolk and vanilla extract.
4. Combine the ingredients. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. 5. Gently fold in the white chocolate chips.
6. Chill the dough. Cover and refrigerate for approximately 45 minutes, until firm enough to handle.
7. Stuff the cookies. Scoop a generous portion of dough and flatten it slightly. 8. Place an unwrapped Lindt Lindor truffle in the center. Cover completely with cookie dough, carefully sealing all edges. Roll into a ball.
9. Freeze overnight. Place the assembled cookie dough balls on a freezer-safe tray. Cover and freeze overnight until completely solid.
10. Preheat the oven. When ready to bake, preheat your oven to 420°F. Use an ungreased baking sheet or a liner rated for that temperature.
11. Bake directly from frozen. Arrange the frozen cookie dough balls on the baking sheet, leaving plenty of room between them. Bake for 12 minutes, or until the cookies are golden and the dough is set.
12. Cool on the baking sheet. Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before carefully transferring them to a wire cooling rack.
13. Decorate. Once cooled, decorate with Christmas sprinkles as desired.![]()
