This Garlic Butter Chicken & Roasted Potatoes is an easy one-pan dinner made with tender chicken and crispy oven-roasted potatoes tossed in garlic butter. It’s budget friendly, family approved, and perfect for busy weeknights. Made with simple pantry staples, this cozy dinner is filling, flavorful, and reheats well for leftovers.

Instructions

  1. Preheat oven to 425°F. Line a baking sheet with parchment paper.

  2. Toss cubed potatoes with 2 tablespoons melted butter, salt, pepper, and Italian seasoning. Spread in a single layer on the baking sheet.

  3. Roast potatoes for 25–30 minutes, flipping halfway through, until golden brown and fork tender.

  4. While potatoes roast, heat remaining 2 tablespoons butter in a large skillet over medium heat.

  5. Add chicken pieces and cook for 6–8 minutes, stirring occasionally, until fully cooked and lightly golden.

  6. Add minced garlic to the skillet and cook for 30–60 seconds until fragrant.

  7. Add roasted potatoes to the skillet and stir everything together. Cook for 2–3 minutes to combine flavors.

  8. Let sit for 3–5 minutes before serving. Garnish with parsley or parmesan if desired.
