7 Budget-Friendly Dinners (Aldi Edition!) Easy Weeknight Meals Your Family Will Love

A full week of easy, affordable dinners (with simple ingredients & BIG flavor)

If you’re anything like me, dinner time can feel like a lot… especially after a long day of work, kids, and everything in between.

So this week, I put together 7 dinners that are actually doable, made with budget-friendly ingredients (mostly Aldi!), and still feel exciting enough that you’re not making the same 3 meals on repeat.

This is one of those weeks where we’re mixing:

  • comfort food 🍲

  • quick skillet meals 🍳

  • a crockpot dinner 🙌

  • and a couple fun, “switch-it-up” recipes

Let’s get into it 👇

🌮 Baked Crunchwrap Supremes

All the fast food vibes… but cheaper and made at home

If your family loves Taco Bell, this one is going to be on repeat. These are crispy, cheesy, and SO satisfying plus you can customize them however you want.

Why you’ll love it:

  • Uses simple taco ingredients

  • Oven-baked = less mess

  • Kid-approved and fun to eat

🥬 Beef & Cabbage Stir Fry

A low-cost, high-flavor dinner that comes together FAST

This is one of those underrated meals that ends up surprising you. It’s savory, a little sweet, and super filling all while using super affordable ingredients.

Why you’ll love it:

  • Budget-friendly (cabbage = cheap + filling)

  • One pan = easy cleanup

  • Great for leftovers

🥩 Garlic Butter Steak Bites & Veggies

Feels fancy… but comes together in under 30 minutes

This is one of those dinners that feels like you tried really hard… but didn’t 😅 The garlic butter makes everything taste incredible.

Why you’ll love it:

  • Quick weeknight “treat” meal

  • Minimal prep

  • Big flavor with simple ingredients

Italian Zucchini Beef Boats

A lighter dinner that still feels comforting

Ihttp://zucchinif you’re trying to mix in something a little lighter without sacrificing flavor, this is it. Think lasagna vibes, but easier and lower cost.

Why you’ll love it:

  • Great way to use zucchini

  • Cheesy + satisfying

  • Perfect balance meal

🍲 Crockpot Beef Chili

Dump, go, and dinner is DONE

We always need at least one crockpot meal in the week and this one is perfect. It’s hearty, cozy, and makes enough for leftovers (which is a win in my house).

Why you’ll love it:

  • Minimal effort

  • Feeds a crowd (or gives leftovers)

  • Perfect for busy days

🍚 Korean-Style Beef Bowls

Sweet, savory, and SO easy

This one is always a hit. It’s packed with flavor but uses really simple ingredients and comes together fast.

Why you’ll love it:

  • 20-minute meal

  • Great over rice

  • Better-than-takeout vibes

🍽️ Pork Tenderloin with Roasted Brussels Sprouts & Garlic Mash

A full “sit-down dinner” that still fits the budget

This feels like a Sunday dinner… but you can totally pull it off during the week. It’s cozy, filling, and a nice change from quick skillet meals.

Why you’ll love it:

  • Balanced meal (protein + sides)

  • Feels elevated but still simple

  • Great for family dinners

💡 How I Keep This Week Budget-Friendly

A few things I focus on when building these meal plans:

✔️ Using overlapping ingredients (ground beef, garlic, onions, etc.)
✔️ Mixing in one or two “stretch meals” (like chili or stir fry)
✔️ Shopping primarily at Aldi to keep costs low
✔️ Choosing meals that create leftovers when possible
