This Lemon Garlic Chicken & Rice Skillet is a quick one-pan dinner made with tender chicken, fluffy rice, garlic, and fresh lemon flavor. It’s budget-friendly, family-approved, and perfect for busy weeknights.

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken pieces and cook until lightly browned on the outside (about 4–5 minutes).
  3. Stir in minced garlic and cook for about 30 seconds until fragrant.
  4. Add uncooked rice, chicken broth, lemon juice, salt, pepper, Italian seasoning, and paprika.
  5. Stir everything together and bring to a gentle simmer.
  6. Cover and reduce heat to low. Cook for 18–20 minutes until rice is tender and liquid is absorbed.
  7. Stir in butter and fluff the rice.
  8. Garnish with parsley and extra lemon slices if desired before serving.
