Instructions

  1. In a small bowl, mash the black beans slightly with a fork. Stir in cumin, chili powder, garlic powder, salt, and pepper.

  2. Heat a skillet over medium heat and lightly butter or oil the pan.

  3. Place one tortilla in the skillet. Sprinkle cheese over half of the tortilla, then spoon the seasoned black bean mixture on top. Add a little more cheese and fold the tortilla over.

  4. Cook for 2–3 minutes per side, until the tortilla is golden and crispy and the cheese is melted.

  5. Remove from the skillet and repeat with remaining tortillas.

  6. Slice into wedges and serve warm.

Note

Don’t overfill, less filling helps the quesadilla flip easily.
