This cottage cheese Alfredo pasta is a creamy, affordable twist on classic Alfredo sauce made with pantry ingredients. A quick and easy weeknight dinner idea.

Instructions

  1. Cook pasta according to package directions. Reserve 1/2 cup pasta water before draining.
  2. In a blender, combine cottage cheese, milk, parmesan, and garlic. Blend until smooth.
  3. In a skillet over medium-low heat, melt the butter.
  4. Pour in the blended sauce and stir until warmed through.
  5. Add cooked pasta and toss to coat.
  6. Stir in a little pasta water if needed to thin the sauce.
  7. Season with salt and pepper and serve warm.

Note

You can add cooked chicken or broccoli if you want to bulk it up. This is a good recipe for a simple meatless dinner too.
