If you love creamy, comforting dinners but don’t love a sink full of dishes, this Creamy Tuscan Chicken Skillet is about to become a favorite. It’s a one-pan chicken dinner made with tender chicken, a rich garlic parmesan cream sauce, spinach, and sun-dried tomatoes-simple ingredients that come together to feel restaurant-worthy without the restaurant price.

Instructions

  1. Season chicken breasts on both sides with salt and black pepper.

  2. Heat olive oil in a large skillet over medium heat. Add chicken and cook for 5–6 minutes per side, until golden and cooked through. Remove chicken from skillet and set aside.

  3. In the same skillet, add minced garlic and cook for about 30 seconds until fragrant.

  4. Pour in chicken broth and scrape up any browned bits from the bottom of the pan.

  5. Stir in heavy cream and bring to a gentle simmer.

  6. Add parmesan cheese and whisk until the sauce thickens slightly.

  7. Stir in sun-dried tomatoes and spinach, letting the spinach wilt.

  8. Return chicken to the skillet and spoon sauce over the top. Simmer for 2–3 minutes until everything is heated through.

  9. Serve warm over pasta, rice, or with bread.

Note

  • Chicken thighs work great if you prefer dark meat.
  • Add a pinch of red pepper flakes for heat.
  • Use half-and-half instead of heavy cream for a lighter sauce.
  • Leftovers reheat best on the stove with a splash of broth.
