These teriyaki chicken rice bowls are a quick and budget-friendly dinner made with tender chicken, rice, and vegetables. Perfect for meal prep or busy weeknights.

  1. Heat oil in a large skillet over medium heat.
  2. Add diced chicken and cook until browned and cooked through.
  3. Stir in garlic and cook for 30 seconds.
  4. Add teriyaki sauce and soy sauce.
  5. Stir until the chicken is coated and the sauce thickens slightly.
  6. Serve the chicken over cooked rice with broccoli and cucumber if using.

Note

You can use microwave rice to make this even faster. This is also great for leftovers the next day.
