Ingredients

Casserole

  • 1 (10-ounce) can Rotel, drained (or 1 can diced tomatoes, drained)
  • 1 (10.5-ounce) can cream of chicken soup
  • ½ cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 1 family-size bag Nacho Cheese Doritos, lightly crushed

  • Sour cream
  • Sliced black olives
  • Green onions
  • Jalapeños
  • Avocado

Instructions

Step 1: Prepare the Beef Mixture

Preheat oven to 350°F and lightly grease a 9×13-inch baking dish.

In a large skillet, cook the ground beef and onion over medium heat until the beef is browned and the onion is tender. Drain excess grease.

Add taco seasoning and water. Simmer for 2–3 minutes.

Stir in the Rotel (or diced tomatoes), cream of chicken soup, sour cream, and 1 cup of shredded cheddar cheese. Mix until combined and heated through.

Step 2: Layer the Casserole

Spread about half of the crushed Doritos in the bottom of the baking dish.

Pour the beef mixture evenly over the chips.

Top with the remaining 1 cup of shredded cheddar cheese.

Sprinkle the remaining Doritos over the top.

Step 3: Bake

Bake uncovered for 20–25 minutes, until hot and bubbly and the cheese is melted.

Let stand for 5 minutes before serving.

Serving Suggestions

Top each serving with:

  • Shredded lettuce
  • Diced tomatoes
  • Sour cream
  • Green onions
  • Avocado

It tastes just like a crunchy taco in casserole form!

Storage Tips

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Keep in mind the Doritos will soften as the casserole sits, but the flavor is still delicious.

Reheat individual portions in the microwave until warmed through.

Helpful Tips

  • Use ground turkey or ground chicken instead of beef.
  • Add a drained can of black beans for extra protein and to stretch the meal.
  • For extra heat, use Spicy Nacho Doritos.
  • Make it even cheesier by adding a Mexican cheese blend.

Frequently Asked Questions

Can I make this ahead of time?

Yes! Assemble everything except the top layer of Doritos. Add those just before baking so they stay crunchy.

Can I freeze it?

The filling freezes well, but the Doritos are best added fresh when baking.

What can I substitute for cream of chicken soup?

Cream of mushroom or cream of cheddar soup both work well.

✅ Quick Tips: Add a drained can of black beans for extra protein and to stretch the meal.
