Place chicken breasts in the bottom of the crockpot.

Pour in chicken broth and heavy cream. Add garlic, sun-dried tomatoes, Italian seasoning, salt, and pepper. Do not stir.

Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is very tender.

Stir in parmesan cheese. Shred chicken if desired, or leave whole.
