This Cheesy Sloppy Joe Biscuit Bake takes everything we love about classic Sloppy Joes and turns it into an easy, cheesy casserole. It has a sweet and savory ground beef filling topped with plenty of cheddar cheese and golden biscuits.
It’s an easy family dinner made with inexpensive ingredients, and using refrigerated biscuits keeps prep really simple. If you’re looking for a new way to use a pound of ground beef, this is a good one!
Why You’ll Love This Recipe
Budget-friendly: A pound of ground beef stretches into a casserole that can feed the whole family.
Easy to make: The filling comes together in one skillet, and refrigerated biscuits make the topping practically effortless.
Kid-friendly: It has all the familiar flavors of a classic Sloppy Joe with the bonus of melted cheese and biscuits.
Simple ingredients: You don’t need canned Sloppy Joe sauce or a long list of ingredients to get that classic sweet and savory flavor.
What You’ll Need
Ground beef: One pound is all you need for the base of the casserole.
Yellow onion: Cooking the onion with the ground beef adds extra flavor without adding much to the cost.
Garlic: Fresh garlic adds another layer of flavor to the homemade Sloppy Joe filling.
Ketchup: This makes up the base of our simple Sloppy Joe sauce.
Worcestershire sauce: Adds a savory flavor that balances out the sweetness of the ketchup and brown sugar.
Brown sugar: Just one tablespoon gives the filling that slightly sweet Sloppy Joe flavor.
Yellow mustard: Adds a little tang and helps balance the sweetness.
Seasonings: Garlic powder, onion powder, paprika, salt, and pepper are all you need.
Cheddar cheese: Because everything is better with melted cheese! I use shredded cheddar, but you can use whatever shredded cheese you already have.
Refrigerated biscuits: Cutting the biscuits into quarters helps them cook evenly and gives you a little biscuit in every scoop.
Ingredients
- 1 lb ground beef
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- ¾ cup ketchup
- 1 tbsp Worcestershire sauce
- 1 tbsp brown sugar
- 1 tsp yellow mustard
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp paprika
- ¼ tsp salt
- ¼ tsp black pepper
- 1½ cups shredded cheddar cheese, divided
- 1 (16 oz) can refrigerated biscuits
How to Make Cheesy Sloppy Joe Biscuit Bake
1. Brown the ground beef.
Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
Add the ground beef and diced onion to a large skillet over medium heat. Cook until the beef is browned and the onion has softened, breaking the meat apart as it cooks. Drain any excess grease if needed.
2. Make the Sloppy Joe filling.
Add the minced garlic and cook for about 30 seconds.
Stir in the ketchup, Worcestershire sauce, brown sugar, yellow mustard, garlic powder, onion powder, paprika, salt, and pepper.
Let everything simmer for 3–5 minutes, stirring occasionally, until the sauce has thickened slightly.
3. Assemble the casserole.
Spread the Sloppy Joe mixture evenly into the prepared baking dish.
Sprinkle 1 cup of shredded cheddar cheese evenly over the beef mixture.
4. Add the biscuits.
Cut each refrigerated biscuit into quarters and arrange the pieces evenly over the cheese and beef mixture.
Sprinkle the remaining ½ cup of cheddar cheese over the top.
5. Bake.
Bake uncovered for 22–28 minutes, or until the biscuits are puffed, golden brown, and cooked through.
6. Serve.
Let the casserole cool for about 5 minutes before scooping and serving.
Tips & Easy Swaps
Cut the biscuits into quarters. Don’t put the biscuits on top whole. Smaller pieces cook more evenly and make it less likely that you’ll end up with doughy biscuit bottoms.
Use what cheese you have. Cheddar is my favorite here, but Colby Jack, Monterey Jack, or a Mexican-style cheese blend will work too.
Save money with store-brand biscuits. There’s no need to buy the name-brand refrigerated biscuits for this recipe. The inexpensive store-brand version works just fine.
Make it a little saucier. If your family likes really saucy Sloppy Joes, add an extra 2–3 tablespoons of ketchup.
Add some veggies. Finely diced bell pepper can be cooked with the onion if you have one that needs to be used up.
What to Serve With Sloppy Joe Biscuit Bake
This is already a pretty filling dinner, so I like to keep the sides inexpensive and simple. Try serving it with:
- Steamed green beans
- Roasted broccoli
- Corn
- Side salad
- Fresh fruit
You can also serve it completely on its own for an easy weeknight dinner.
How to Store Leftovers
Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
For the best texture, reheat individual portions in the oven or air fryer so the biscuits can crisp back up. The microwave works too, but the biscuits will be softer.
Notes
Cutting the biscuits into quarters helps them bake more evenly and prevents the centers from staying doughy.
If the biscuit tops are browning before the centers are fully cooked, loosely cover the baking dish with foil for the remaining baking time.
