Weekly Meal Plan: 7 Budget-Friendly Dinners (Week of January 18)

If you’ve ever stood in your kitchen at 4:30pm wondering what’s for dinner, while also stressing about grocery prices, you’re not alone. I’ve been there more times than I can count. That feeling is exactly why I started building weekly dinner plans around shared ingredients, simple recipes, and realistic budgets.

Every week, I plan out 7 dinners using overlapping groceries, which helps reduce food waste and keeps costs down. While grocery prices vary by location and store, this method usually lands us around $10 per dinner when you average everything out not because each ingredient is cheap, but because we’re using them smartly across multiple meals.

This week’s lineup is cozy, family-friendly, and perfect for busy nights when you still want something that feels comforting and homemade.

Spinach Artichoke Baked Chicken

Creamy, cozy, and packed with flavor, this baked chicken is inspired by everyone’s favorite dip but turned into a full dinner. It pairs perfectly with rice, pasta, or roasted veggies and feels way fancier than the effort it takes.

How the “$10 Dinners” Concept Works

Just to clear up a common question I get:
The meals themselves aren’t made with only $10 worth of groceries total.

Instead, I shop once for the week (usually around $65–$75), then plan dinners that reuse ingredients across multiple meals. That’s how each dinner averages out to about $10 and why there’s less waste, fewer last-minute store runs, and a lot less stress!
