If your family loves taco night, you’re going to love this Walking Taco Bake! It’s loaded with seasoned ground beef, crunchy Fritos, melty cheddar cheese, and all your favorite taco toppings. Think of it as a giant walking taco that’s baked in one dish easy to make, fun to eat, and perfect for feeding a hungry family.

This recipe is one of my favorite weeknight dinners because it’s inexpensive, comes together in about 30 minutes, and uses simple ingredients I usually already have on hand. It’s also great for game days, potlucks, or anytime you need a crowd-pleasing meal.

The best part? Everyone can customize their own serving with their favorite toppings, so even picky eaters leave the table happy.

Why You’ll Love This Recipe

  • Budget-friendly
  • Ready in about 30 minutes
  • Kid-approved
  • Great for taco night
  • Perfect for feeding a crowd
  • Easy to customize
  • Made with simple ingredients

Ingredients

For the Bake

  • 1 pound ground beef
  • 1 small onion, diced
  • 1 packet taco seasoning
  • ¼ cup water
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can corn, drained
  • 2 cups shredded cheddar cheese
  • 4 cups Fritos corn chips

Optional Toppings

  • Shredded lettuce
  • Diced tomatoes
  • Sour cream
  • Salsa
  • Jalapeños
  • Sliced black olives
  • Avocado
  • Green onions

Instructions

Step 1

Preheat your oven to 375°F.

Lightly grease a 9×13-inch baking dish.

Step 2

Brown the ground beef and onion in a large skillet over medium heat until the beef is cooked through.

Drain any excess grease.

Stir in the taco seasoning and water. Simmer for 2–3 minutes.

Mix in the black beans and corn.

Step 3

Spread half of the Fritos in the bottom of the baking dish.

Top with the beef mixture.

Sprinkle with the shredded cheddar cheese.

Add the remaining Fritos over the top.

Step 4

Bake for 10–15 minutes, just until the cheese is melted and everything is heated through.

Step 5

Top with shredded lettuce, diced tomatoes, sour cream, salsa, green onions, or your favorite taco toppings.

Serve immediately while the Fritos are still crunchy.

Budget-Friendly Tips

Stretch this meal even further by serving it with Spanish rice or a simple side salad.

Buying store-brand corn chips, taco seasoning, and canned vegetables is an easy way to keep the grocery bill low without sacrificing flavor.

Make It Kid-Friendly

Leave the lettuce, tomatoes, jalapeños, and salsa on the side so everyone can build their own plate.

If your kids don’t like beans, simply leave them out or swap in extra corn.

Storage

Store the beef mixture separately from the Fritos if possible. Leftovers will keep in the refrigerator for up to 4 days.

Reheating

Warm the beef mixture in the microwave or on the stovetop, then add fresh Fritos and toppings before serving so everything stays nice and crunchy.
