  • 2 lbs boneless, skinless chicken breasts
  • 1½ lbs baby Yukon Gold potatoes, halved

  • ½ cup grated Parmesan

How to Make Lemon Herb Chicken with Parmesan Roasted Potatoes

  1. Preheat the oven to 400°F. Lightly grease a large sheet pan or line it with parchment paper.
  2. Toss the halved potatoes with 2 tablespoons olive oil, Parmesan, 1 teaspoon garlic powder, ½ teaspoon Italian seasoning, paprika, salt, and pepper.
  3. Arrange the potatoes cut-side down on the sheet pan and roast for 15 minutes.
  4. Meanwhile, combine 1 tablespoon olive oil, melted butter, garlic, lemon juice, lemon zest, 1 teaspoon Italian seasoning, ½ teaspoon garlic powder, onion powder, salt, and pepper.
  5. Coat the chicken breasts in the lemon herb mixture.
  6. After the potatoes have roasted for 15 minutes, flip or stir them and add the chicken to the sheet pan.
  7. Toss the green beans with the remaining tablespoon of olive oil and season with salt and pepper. Arrange them around the chicken and potatoes.
  8. Return the sheet pan to the oven and bake for another 18–25 minutes, or until the chicken reaches an internal temperature of 165°F and the potatoes are tender.
  9. For extra crispy potatoes, broil everything for 1–2 minutes at the end.

Tips for the Best Sheet Pan Chicken

Give the potatoes a head start. Don’t add everything to the pan at once. Potatoes take longer to cook than chicken and green beans, so roasting them for 15 minutes first helps everything finish at the same time.

Watch the thickness of your chicken. Very thick chicken breasts may take longer to cook. You can slice them horizontally into thinner pieces or pound them to an even thickness for faster, more even cooking.

Don’t overcrowd your pan. Use your largest sheet pan so the vegetables roast instead of steaming.

Use freshly grated Parmesan if you have it. It melts and browns beautifully on the potatoes, but regular grated Parmesan works too.

Broil at the end. A minute or two under the broiler gives those potatoes some gorgeous crispy edges. Just keep an eye on them!

No Yukon Gold potatoes? Baby red potatoes or diced russet potatoes will work.

Boneless, skinless chicken thighs can also be used instead of chicken breasts.
