Give them some space. Keep the tacos in a single layer so the tortillas can actually crisp instead of steam.

Easy Substitutions

Use leftover chicken: Skip cooking the chicken breasts and use about 3 cups of cooked shredded chicken instead.

Change the cheese: Cheddar, Monterey Jack, pepper Jack, or a Mexican-style blend will all work.
