This Crockpot Creamy Salsa Verde Chicken is an easy, budget-friendly dinner made with simple ingredients and minimal prep. Tender chicken cooks low and slow in salsa verde, then gets finished with cream cheese for a rich, cozy meal that’s perfect for rice bowls, tacos, meal prep, or leftovers.

Instructions

  1. Add chicken to the crockpot in an even layer.

  2. Season the chicken with garlic powder, onion powder, salt, and pepper.

  3. Pour salsa verde evenly over the chicken.

  4. Cover and cook

    • LOW for 6–7 hours, or

    • HIGH for 3–4 hours,
      until chicken shreds easily.

  5. Remove chicken and shred with two forks.

  6. Return shredded chicken to the crockpot.

  7. Add cream cheese, cover, and cook 10–15 minutes until softened.

  8. Stir until creamy and fully combined.

  9. Taste and adjust seasoning. Stir in optional corn or beans if using.
