If you need a dinner that feels comforting but takes hardly any effort, this Creamy Tomato Tortellini is such a good one to keep in your back pocket. It uses frozen cheese tortellini, a jar of marinara, cream cheese, and spinach to make a super simple sauce that tastes like you worked a lot harder than you actually did.

This is the kind of dinner that saves me on busy nights because it comes together fast, uses easy ingredients, and still feels like a full meal. You can keep it meatless or add shredded rotisserie chicken if you want to make it a little heartier. Either way, it’s creamy, cozy, and really family-friendly.

I also love this one because it feels a little more special than just plain pasta and sauce, but it’s still affordable and easy enough for a weeknight. Pair it with garlic toast, a simple salad, or even just some fruit on the side and dinner is done.

This creamy tomato tortellini is an easy weeknight dinner made with frozen cheese tortellini, marinara, cream cheese, and spinach. It’s simple, budget-friendly, and ready fast.

Instructions

  1. Bring a large pot of water to a boil and cook the frozen tortellini according to the package directions. Drain and set aside.
  2. In a large skillet over medium heat, add the marinara sauce and cream cheese. Stir until the cream cheese is melted and the sauce is smooth and creamy.
  3. Stir in the spinach and garlic, if using. Cook for 1 to 2 minutes, just until the spinach wilts.
  4. Add the shredded chicken, if using, and stir until warmed through.
  5. Add the cooked tortellini to the skillet and gently toss until everything is coated in the sauce.
  6. Top with shredded mozzarella if desired and let it melt before serving.

Note

Frozen tortellini works perfectly here. No need to thaw it first.

Add chicken to make it a little more filling.

Add a splash of pasta water if you want to thin the sauce.

You can also add mushrooms or cooked sausage if your family likes those.
