24 peppermint bark cookies for $4.88These start with a box of brownie mix, so they’re fudgy in the middle, then get dipped in white chocolate and crushed candy canes. That’s about 20¢ a cookie, and they look like they came from a bakery tray. This is Day 5 of my 12 Days of Budget-Friendly Christmas Treats, where I’m making 12 Christmas treats with just $100.💰 Running total: $48.18 spent, $51.82 left for 7 more treats.Crushed candy canes: love them or skip them? 🤍The full recipe is in the first comment. You can catch up on Days 1–4 in the pinned post at the top of my page. ...

Day 4 of 12 Days of Budget-Friendly Christmas Treats 🎄Gingerbread Cinnamon Roll Cheesecake Bars. A can of cinnamon rolls becomes the crust, then there’s a creamy gingerbread cheesecake layer, a brown sugar crumble, and a drizzle of icing on top. They taste like Christmas morning. The whole pan cost $6.54 and makes 12 bars, so that’s about 55¢ each. After yesterday’s splurge, this one got me back on track.💰 Running total: $43.30 spent, $56.70 left for 8 more treats.Breakfast or dessert? I honestly can’t decide. ☕️The full recipe is in the first comment. You can catch up on Days 1–3 in the pinned post at the top of my page. ...

Lindt Stuffed Christmas Cookie 🍪🎅🎄For the Cookies:-2¼ cups all-purpose flour-½ tsp baking soda-½ tsp salt-¾ cup unsalted butter, melted and slightly cooled-1 cup packed brown sugar-½ cup granulated sugar-1 large egg, room temperature-1 large egg yolk, room temperature-1 tbsp vanilla extract-1⅓ cups white chocolate chipsFor the Filling & Decoration:-12 Lindt Lindor chocolate truffles-Red and green Christmas sprinkles, optionalInstructions:1. Prepare the dry ingredients. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.2. Mix the butter and sugars. In a large mixing bowl, combine the melted, slightly cooled butter, brown sugar, and granulated sugar. Mix until well combined.3. Add the eggs and vanilla. Beat in the whole egg, followed by the egg yolk and vanilla extract.4. Combine the ingredients. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. 5. Gently fold in the white chocolate chips.6. Chill the dough. Cover and refrigerate for approximately 45 minutes, until firm enough to handle.7. Stuff the cookies. Scoop a generous portion of dough and flatten it slightly. 8. Place an unwrapped Lindt Lindor truffle in the center. Cover completely with cookie dough, carefully sealing all edges. Roll into a ball.9. Freeze overnight. Place the assembled cookie dough balls on a freezer-safe tray. Cover and freeze overnight until completely solid.10. Preheat the oven. When ready to bake, preheat your oven to 420°F. Use an ungreased baking sheet or a liner rated for that temperature.11. Bake directly from frozen. Arrange the frozen cookie dough balls on the baking sheet, leaving plenty of room between them. Bake for 12 minutes, or until the cookies are golden and the dough is set.12. Cool on the baking sheet. Day 3 of 12 Days of Budget-Friendly Christmas Treats 🎄Santa’s Stuffed Christmas Cookies, with a whole Lindt truffle hiding inside each one. When you break them open, the center is warm and melty. These took me a little trial and error. My first batches spread and leaked everywhere. The trick that finally worked is freezing the cookie balls overnight and baking them straight from frozen. The whole batch cost $16.25 and makes 12 big cookies, so that’s about $1.35 each. They’re my priciest treat so far, but they’re worth it.💰 Running total: $36.76 spent, $63.24 left for 9 more treats.Would you leave these out for Santa, or keep them for yourself? 🎅The full recipe is in the first comment. You can catch up on Days 1 and 2 in the pinned post at the top of my page. ...
