These Mini Baked Chicken Tacos are crispy, cheesy, and surprisingly easy to make! Seasoned shredded chicken and plenty of cheese are tucked inside mini tortillas and baked until golden and crispy.
They're an easy, budget-friendly dinner that works especially well for busy weeknights. Put out some salsa, sour cream, and your family's favorite taco toppings and let everyone build their own plate.
Chicken breasts: I use about 1½ pounds of boneless, skinless chicken breasts and shred them after cooking.
Taco seasoning: A packet works perfectly, or you can make a quick homemade taco seasoning with pantry spices.
Salsa: Adds flavor and moisture to the shredded chicken without needing a long list of ingredients.
Chicken broth: Helps the chicken stay tender while it cooks.
Street taco tortillas: The smaller size makes these perfect little handheld tacos.
Shredded Mexican-style cheese: Use your favorite blend or whatever shredded cheese you already have.

Mix everything together and use it in place of one packet of taco seasoning.
Add the chicken breasts, taco seasoning, salsa, and chicken broth to a large skillet.
Cover and cook over medium-low heat for about 15–20 minutes, or until the chicken reaches an internal temperature of 165°F.

Remove the chicken from the skillet and shred it using two forks.
Return the shredded chicken to the skillet and stir it into the salsa mixture. Cook uncovered for another 2–3 minutes to allow some of the excess liquid to cook off.
Preheat your oven to 425°F and line a large baking sheet with parchment paper.
Warm the tortillas in the microwave for about 20–30 seconds. This makes them much easier to fold without cracking.
Add a small amount of shredded cheese to one half of each tortilla. Top with about 2 tablespoons of shredded chicken and another small sprinkle of cheese.
Fold the tortillas in half and arrange them in a single layer on the baking sheet.
